The fritters are also known as fritters of Lent , is a typical sweet in many regions of Spain and although the tradition places the fritters as a sweet of Easter is also prepared in November, specifically to celebrate the feast of all Saints.

Elaboration:

In a saucepan or heater we put the water to heat along with the milk, the salt, the sugar, the butter and the ralladura of the skin of lemon or the orange.

Once it is hot add the sifted flour and mix well to form the dough, stir until the dough is released from the walls of the heater.

Remove from heat and let cool. When it is cold, add the beaten eggs to the dough, mixing well. Leave the dough in the refrigerator for about 2 hours.

Remove the dough from the refrigerator and reserve to warm the oil. Put the oil in a pan to heat with medium heat.

When the oil is very hot with the aid of two spoons, we will take a small amount of dough and we will form a ball to the donut and we will fry.

Elaboration:

We remove the skin from the pumpkin, wash it and break it into two or three pieces. We put the pumpkin to cook in a cauldron with a little water that only covers and a little salt. When it is tender, we extinguish the fire and drain the water. We mash the pumpkin with the blender.

Sieve the flour, put it in a bowl. We add to the flour the eggs well beaten, the sugar, the grated skin of the orange, the water and we are making the mass.

Cover the dough with transparent film and let stand for half an hour. With the aid of two spoons of dessert we are forming the fritters in the form of balls.

In a frying pan we put the oil to heat with moderate fire. Once it is very hot we will fry the fritters gilding them on both sides.

We put absorbent paper or napkin on a plate to go putting the fried fritters in it and that it drains the surplus of oil.

Let cool the fritters and once cold we can present them sprinkled with icing sugar or chopped by impregnating them in white or granulated sugar.

Fritters stuffed with custard

The fritters stuffed with custard are very easy to prepare and they are very rich. To fill them we can make a homemade vanilla custard that would leave quite thick or resort to industrial custards already elaborated. Whether we opt for a custard or another, we must bear in mind that it must be thick.

  • ¼ kilo of plain wheat flour.
  • 4 eggs.
  • The skin of a lemon.
  • Grains of anise or matalahĂșva, a teaspoon.
  • Sunflower oil or soft virgin olive oil to fry the fritters.
  • Sugar powder to sprinkle.
  • Vanilla custard to fill the fritters.

Elaboration:

In a saucepan or heater we put the milk to heat to the fire with the granites of anise and the skin of the lemon.

We heat until the milk boils and once it starts to boil we put out the fire.

We pass the milk to a bowland we are adding the sifted flour.

Let’s make a dough and add the eggs well beaten.

Continue kneading until the dough is not sticky.

Put the oil in a pan and heat the fire with moderate heat.

With the aid of two spoons of dessert we are forming the fritters in the form of balls.

When the oil is hot, fry the fritters on both sides.

Let the fried fritters in a dish covered with absorbent paper to drain the oil.

Let the fritters cool.

When they are cold the fritters we open them by the center to fill them with a little thick custard.
