The cilantro is a very aromatic herb belonging to the family of Umbelliferae or Apiaceae, is widely used in the cuisine of many countries such as in Asian cuisine, Latin American cuisine, Indian cuisine becoming an essential condiment to which they brings its unique flavor and with which we can prepare many recipes.

He is also known with other names like coriander or coriander. In addition to giving flavor, cilantro is an herb with nutritional and medicinal properties widely used in herbal medicine.

Ingredients:

  • A small piece of coriander.
  • One kilo of potatoes peeled, washed and cut into squares.
  • An onion, skinless, washed and chopped.
  • 3 garlic cloves without skin and minced.
  • 100 grams of tomato, without skin and without seeds.
  • 4 eggs, (one egg per person).
  • A teaspoon of cumin in grain.
  • A teaspoon of sweet pepper.
  • Salt.
  • Extra virgin olive oil.
  • A pinch of turmeric or food coloring.

Elaboration:

For the potatoes to help thicken the coriander broth a bit when cutting them is better to break them, breaking them means that once we put the knife to throw it up, instead of making a smooth cut.

We washed the coriander sprigs, chopped about 3 small sprigs and reserved about 5 more sprigs. We put a fondito of olive oil to heat in the cauldron to brown the onion.

When the frying is almost ready, add the sweet paprika, ground cumin and chopped cilantro and stir.

Add the potatoes cut into squares, water in quantity that covers the potatoes, a little saltand cook with medium heat until it begins to boil.

Once it begins to boil, reduce the heat to a minimum, add the turmeric, stir, cover the cauldron and cook for about 40 minutes.

Cook the coriander broth until the potatoes are tender. Before putting out the fire, about 5 minutes before, we peel the eggs and add them to the broth.

We also added the coriander sprigs we had reserved. Turn off the heat, let stand for about 10 minutes.

We are ready to taste our exquisite coriander broth.

The cilantro broth we can eat it with a spoonful of gofio sprinkled on top, with scalded gofio, olives of the country with mojo, a piece of cheese or a good piece of bread.

Coriander mojo

The coriander mojo or green mojo is prepared in the Canary Islands to accompany fish dishes, as well as wrinkled potatoes. It is very easy to make and is very rich.

Ingredients:

  • Half a bunch of cilantro.
  • 5 garlic cloves.
  • Half a glass of extra virgin olive oil.
  • A splash of wine vinegar.
  • Half teaspoon ground cumin.
  • A pinch of green pepper.
  • Salt.

Elaboration:

Wash the bunch of coriander well. We removed the skin from the garlic cloves and chopped them. Chop coriander well.

We put the chopped garlic cloves and cilantro in a mortar and we crush everything well.

Add the olive oil, the pepper, a little salt, the ground cumin and stir to mix well. Then add the vinegar trickle and stir again.

We arrange the cilantro mojo in a bowl or salsa and bring it to the table.

We have ready the coriander mojo that can be tasted with any of these dishes, baked fish, boiled or fried fish, grilled squid, stewed or grilled octopus, grilled limpets, wrinkled potatoes or with potatoes boiled.
