  • 2 cloves garlic
  • 1 can of coconut milk
  • 2 cups pumpkin puree (420 g)
  • Concentrated Vegetable Broth
  • 1 cup water (250 ml)

Preparation

  • Preheat oven to 200 ° C. Place the cauliflower on a baking sheet with 1 tablespoon of olive oil, salt, pepper and half the cilantro.
  • Let the cauliflower roast for 30 to 35 minutes, stirring halfway through cooking until golden.
  • In a large pot, heat a trickle of oil over medium-high heat. Add the shallots, carrots and remaining coriander.
