Ingredients

  • 3 eggs
  • 2 cups cassava starch (300 g)
  • 2 cups oat flakes (90 g)
  • 2 tablespoons vanilla essence (30 g)
  • ½ cup olive oil, sunflower or coconut oil (110 g)
  • 2 cups coconut vegetable drink, gluten-free oats or rice (500 ml)
  • ½ cup of agave syrup or coconut sugar (110 g)
  • 1 pinch of sea salt
  • 1 tablespoon baking powder (12 g)
  • Chocolate chips (without milk)

Preparation

  • First, preheat the oven to 180 ° C.
  • For greater ease, we can make this recipe with the mixer.
  • Start by beating the 3 eggs.
  • Add the essence of vanilla, salt, sweetener, vegetable drink and oiland beat again.
  • We will incorporate the manioc starch and the oats and we will beat again.
  • Finally, add the yeast and mix well the whole preparation, which should have a fairly liquid texture.
  • We recommend using individual molds of muffins or muffins , for example, silicone, which we fill about three quarters.
  • Then we add in each compartment a few chocolate chips.
  • Bake for about 40 minutes at 180 ° C. Make sure they are well cooked before being removed from the oven.
  • If using silicone molds we will remove them to prevent the base from getting wet.
  • We will let them cool down and they will be ready to eat.
