If there is a dessert or sweet typically Christmas that becomes one of the best known and traditional (especially in our country, where in fact is extremely popular and common),  nougat is  no doubt that is the most outstanding. Gluten-free Jijona Nougat: a recipe suitable for celiacs

Ingredients:

  • 625 g raw almonds
  • 87 g of honey
  • 125 g of unrefined organic sugar (you can substitute it with icing sugar)

Elaboration of the gluten-free Jijona nougat:

First let’s start toasting our almonds. To do this preheat the oven to 180ยบ C of temperatureand when it is hot distributes the almonds through the oven tray. Put in the oven and heat for 5 minutes, until the almonds start to brown. Then remove from oven and set aside.

If you use sugar, you can skip this step. If you do notand you’re going to use sugar, put it in the coffee grinder and crush it well until you get as fine a powder as possible.

Put the almonds in the jar of the cooking robot or blender and stir well, until the almonds begin to release their oil ..

Then mix the icing sugar in a large bowl with the honeyand add the almond paste. Mix everything well again in the food processor or food processor, until you get a paste almost liquid.

Line a mold with baking paper (or nonstick), pour the nougat mass and reserve in the refrigerator for a few hours. If you let it stand for a few days the result will be even better.

To finish, remove it from the mold and with the help of absorbent paper towels (or napkins) removes excess oil both at the top and at the bottom. Ready! Cut it into pieces or as you prefer.
