The nougat , together with the polvorones , undoubtedly become one of the typical Christmas desserts , characteristic of the meals and dinners that are celebrated at Christmas.

Originally it consists of a sweet dough that is obtained by the cooking of honey to which almonds are peeled and toasted. The resulting paste is then kneaded, giving it a rectangular or cake shape. Although at present, it is true, we can find a great diversity of nougat recipes for all tastesand practically all flavors.

Gluten-free Jijona nougat recipe

What would be Christmas without the  nougat of Jijona ? It is, almost certainly, one of the most classic and traditional Christmas desserts, especially in Spain, where it comes from and is original. For those who have celiac disease, we propose a wonderful option to enjoy it. You can also opt for another equally delicious version in our special note of  gluten-free Jijona nougat .

Ingredients:

  • 300 g raw almonds
  • 120 g of sugar
  • 40 g of honey
  • 1 egg white
  • Sunflower oil (to spread the mold)

Elaboration of the gluten-free Jijona nougat:

First we will toast the raw almonds. It is very simple, since you only have to preheat the oven to 180ºC, put the almonds in the oven tray and toast them at this temperature for 5 minutes (until they acquire a certain tone). Then remove from oven and set aside.

When the almonds have cooled, put them in the blender jar (or the kitchen blender jar)and stir them, but not much, to prevent them from releasing fat.

Put the egg white in a bowl, add the honey and sugarand beat everything very well. Add the ground almond and mix again.

Grease the nougat mold with a little sunflower oil, add the nougat and reserve in the refrigerator until it hardens.

Sesame nougat, corn and honey

It is almost certainly a variant of less well known Christmas nougat, but quite similar to the traditional Jijona nougat. This time we use sesame and corn flakes.

Ingredients:

  • 5 tablespoons sesame paste
  • 5 tablespoons honey
  • 5 tablespoons corn flakes
  • 10 drops of orange blossom

Elaboration of the gluten-free Jijona nougat:

In a saucepan heat the honey until it takes caramel point. Mix with the cornflakes and the sesame paste. Add the orange water drops (it will bring a different aroma, almost delicious).

Moisten an English pudding or tray with water. Place the pasta on it and leave it at room temperature.

Finally insert into the refrigerator until it takes a firm consistency.

Gluten free peanut nougat

This option is ideal for lovers of  peanuts . To me personally I am very passionate about the popular butter or peanut butter, so this option is quite similar (but in the form of wonderful Christmas nougat).

Ingredients:

  • 320 g peanuts (roasted and without skin)
  • 2 egg whites
  • 250 g of sugar
  • 120 g honey (gluten free, suitable for coeliacs)
  • 200 cc of water

Elaboration of peanut nougat gluten-free:

The preparation of this nougat is even simpler since it is very easy to find roasted peanuts, without skin and without salt. So, first we begin by separating the egg yolks from the egg whitesand beat the egg whites to the point of snow, with a pinch of salt. Book it.

Put the water together with the sugar on low heat in a saucepan until it forms at the ball point. When you take this point add honey and mix well. Add this sweet mixture to the whites as well as the bates.

In the glass of the mixer (or kitchen robot) put the peanuts and stir well a little. Add to the above mixtureand mix well.

Put nonstick paper in the nougat mold, add the pastaand place in the refrigerator. Ready!.

Gluten-free chocolate nougat and hazelnut recipe

If you are passionate about chocolate as much as we will probably enjoy this wonderful option  of chocolate nougat and hazelnuts , very easy to prepare and also tremendously delicious. You dare?.

Ingredients:

  • 350 g of chocolate coating (gluten free, suitable for coeliacs)
  • 100 g toasted hazelnuts (without salt)
  • A little butter (to melt the chocolate)

Elaboration of chocolate nougat and hazelnuts without gluten:

If you do not find toasted and unsalted hazelnuts we can directly choose to toast them ourselves at home. For this you only have to preheat the oven to 180º, put the hazelnuts in the oven tray and toast them for 5 minutes. Then let them cool and store.

Now you can either grind the toasted hazelnuts or break them a little on some pieces.

Put some butter in a saucepan or saucepan, add the chopped chopped chocolate and heat the fire to low heat, stirring constantly until the chocolate melts. 

Once the chocolate is melted remove from the heat and add the roasted hazelnuts. Mix well again.

Put non-stick paper in the mold and pour the nougat mass, adjusting well. Let it cool down a little and reserve in the refrigerator until it has cooled completely.

Gluten-free chocolate and rice nougat recipe

For lovers of  dark chocolate , but also who can not consume foods that contain gluten, we propose this wonderful option of  gluten-free chocolate nougat . Do you dare to prepare it ?.

Ingredients:

  • 1 tablet of gluten-free black chocolate (suitable for coeliacs)
  • 200 g of rice flakes
  • 25 g butter
  • 1 can of condensed milk

Elaboration of chocolate nougat and gluten-free rice:

First let’s cut the dark chocolate into pieces. Then we put a casserole or saucepan to the fire and we add the condensed milk and the butter.

When it is hot add the chopped black chocolate, lower the heatand stir constantly to get the chocolate to melt. When ready we put out the fire and incorporate the rice flakes, mixing well with the help of a wooden spoon.

While cooling, line a rectangular mold with a little non-stick paper, this way we will be able to unmold the chocolate nougat in a simpler way.

Put the dough in the mold by pressing well with the aid of a spatulaand store in the refrigerator for a few hours until it hardens. Then it will be readyand you can enjoy it.
